Potassium Sorbate is the potassium salt of sorbic acid. Its chemical formula is C₆H₇KO₂ or CH₃CH=CH–CH=CH–COOK. Potassium sorbate works by inhibiting enzymes involved in microbial metabolism, particularly in molds and yeasts. It is most effective at low pH.
